Description: The selected vines, located between 300 and 600 meters above sea level, are trained in Guyot, on clayey soils with limited yields of grapes per hectare. The Frappato grapes are harvested at the first ripening, so that all the typical freshness remains in the must which is left to ferment very slowly in small steel tanks. The Nero d'Avola grapes, on the other hand, are left on the vine for a slight withering and natural dehydration. They are then collected later and, with extreme care, placed in wooden boxes. After a light pressing, the must ferments at a controlled temperature.
