Description : Grillo is a white must grape variety present mainly in western Sicily and in particular in the Marsalese area. It is used in purity for the production of some DOCs in the province of Trapani. The harvest is normally abundant, but not all soils are suitable for this vine which has the particularity of having a much higher sugar content than other white grapes.
The vineyards are located on the hills at 300/400 meters above sea level and are trained using the Guyot system with 4,200 plants per hectare. Harvest of perfectly ripe grapes in the first ten days of September. Destemming, crushing and soft pressing, fermentation at a controlled temperature of 15°.
A characteristic of Grillo is its vocation to become a wine with a high alcohol content. Another unusual vocation for a white wine is that of being excellent as an aged wine, for years, decades, or centuries. Vinified in purity and with the aid of cryomaceration, Grillo can produce wines of great organoleptic depth, full-bodied, fragrant and with good longevity potential, superior to all Sicilian whites. Grillo is a vigorous vine and its production is very abundant.
