Production: very rich red soils of iron oxides lying on limestone, located in the Salentine peninsula (province of Taranto).
Wine-making: de-stemming and crushing the grapes; maceration at a controlled temperature for 8-10 days with periodic rain replacements. Racking and malo-lactic fermentation in stainless steel. Aged in American oak barrels and French second passage for the next 8-10 months.
Sensory characteristics: ruby red color with violet hues. Intense, complex, fruity, with notes of red fruit (cherries and blackberries). Of great and soft, warm and quite tannic structure, very persistent.
Serving suggestions: excellent with first courses and lamb and game with rich sauces, hard cheeses.
Serving temperature: 16-18 ° C.
