Made using the classic Burgundian techniques of fermenting in ‘open-top’ fermenters with regular punching down of the ‘cap’ to extract the colour and fruit. The new wine is transferred into small French oak barrels to mature for 12 months. Silky-smooth on the palate with strawberry fruit and savoury flavours.

A temperamental thin skinned grape and difficult to grow, when produced of any quality it demands high prices. The thin skin means it's very light in colour body and tannin, it characteristically has searing acidity and full lingering flavours of raspberry, strawberry, cherry, violets and sweet spice.
