Description

The PX sherries are made from the high sugar, overripe Pedro Ximénez grape and are considered the sweetest wines ever. The taste is due to the Asoleo process, in which the grapes are laid out in the sun and left to dry - this not only intensifies the sweet aromas, but also preserves the typical acidic notes of the fruit. The expansion of the liqueur-like dessert wine takes place purely by oxidation; PX sherries stand out due to their dark ebony coloring and thick consistency. As was to be expected, the wood of former PX casks gives off syrupy and fruity-sweet aromas to the whisky, with an extraordinary number of whiskeys being refined in Pedro Ximénez casks.

The Kavalan distillery in the Far East brought out a single cask bottling from such a PX cask as part of their much-celebrated soloist series. This whiskey has sherry-typical influences of raisins and honey syrup. The storage time of the Kavalan Solist PX Sherry Whiskey in the five-story warehouse with a temperature of over 24°C is typically less than ten years.

Nose: Nuts, chocolate, citrus with some oaky notes

Palate: Dried and tropical fruit with chocolate and nuts

Finish: Raisins with some herbal notes
