Food Pairing: Chardonnay Jermann is a fresh and delicate wine, very suitable with starters and seafood pasta or risotto dishes. It is excellent also with raw seafood thanks to its acidity and savouriness. Great with short-aged cheeses.
Description: Jermann Chardonnay comes from the best Chardonnay grapes of the beautiful estate of Silvio Jermann. The grapes are hand-harvested and then brought to the winery for the pressing, that is carried out in absence of oxygen in order to preserve all the aromatic features which will be found in the wine. The musts ferment in steel tanks for 16 days at a temperature of 17°C to allow the yeast to express the aromatic profile of the Chardonnay. Then Jermann Chardonnay rests on fine less and batonnage is carried out regularly to widen and improve its flavour and aroma profile. Jermann Chardonnay is bottled in the following spring and rests for few months before being released.
