Food Pairing: Jean-Marc Boillot's Pommard Rouge pairs wonderfully with a variety of dishes. For meats and poultry, consider roast duck, grilled chicken seasoned with herbs like thyme or rosemary, pork tenderloin with a fruit-based sauce such as cherry or cranberry, and game birds like quail or pheasant. For fish and seafood, grilled or roasted salmon and seared tuna with a light crusting of sesame seeds are excellent choices. Vegetarian options include mushroom dishes like mushroom risotto or wild mushroom tart, roasted root vegetables such as carrots, parsnips, or beets, and soft, creamy cheeses like Brie or Camembert. Pasta and rice dishes like risotto, particularly with mushrooms or truffles, and pasta with light tomato sauces such as Marinara or Pomodoro, also pair well. In terms of sauces and seasonings, herbs like thyme, rosemary, or sage, light tomato-based sauces, and fruit-based sauces with cherries, cranberries, or plums are recommended. Avoid overly spicy or heavily spiced dishes to prevent overpowering the wine’s subtle nuances, and aim to match the wine’s acidity with dishes that have a bit of acidity, such as those with tomatoes or vinegar-based dressings, to enhance its characteristics. Enjoy your dining experience with this delightful Pinot Noir!

Description: The Pommard from a single parcel just outside the winery, under Les Epenots, is very typical of Boillot's results in this vintage. The rhubarb and redcurrant make the nose pucker slightly, but they are refreshing and invigorating. There is a memory of malic acid in the flavours, but a refinement of very light tannins and a subtle smokiness in the finish that adds to the salivating, white-wine-like appeal of this bright pinot.
