Made from a blend of herbs and spices combined with a wine from the Moscato delle Langhe appellation, Del Professore Bianco is an olfactory and gustatory delight. Its beautiful label boasts a number of gold medals and is a work of art in itself, featuring the words: “Vermouth Pure Vintage, Del Professore, Antica Ricetta, Vecchio Opificio, Il Vermouth di una volta”. Exceptional.
Nose : deep, powerful. A hint of something medicinal and liquorice-based, with syrupy fruits (apricot, raisins). Aromatic plants, herbs and candied citrus fruits (lemon, orange) rise to the surface. It gradually expands into a rich sense of exoticism (banana, pineapple).
Palate : voluptuous even in its bitterness. The latter serves as its backbone. It gains in power and intensity, reaching a formidable crescendo in its maturity. Its ‘old-fashioned’ style is stripped of any frivolity. It draws on its balance between sweetness, saltiness, bitterness and acidity. Roasted fruits dominate.
Overall : long, intense. The quality of its fruit continues to be exceptional. Boasting unprecedented depth, the last of its sugars are released in a manner not dissimilar to an ice wine. Simply perfect, it stands out through the freedom of its expression. Emptied, the glass returns to grape skin.
