Terroir and climate
Production area: plateau of marl origin with a high clayey component, strongly calcareous. Thanks to the climate of Campobello di Licata, the company manages to obtain a full maturation of the chosen selections, capable of preserving freshness, elegance and aromatic vein. A "Mediterranean" expression that manifests itself with a style in the winemaking and cellar choices all aimed at preserving and enhancing the territorial expression.
Vinification and ageing
The grapes are harvested manually first half of August for the chardonnay, first half of September for the inzolia.
Whole bunch pressing, fermentation at controlled temperature and refinement of the sparkling wine bases in steel. The cuvée, with the addition of the "liqueur de tirage", is sent to the second fermentation. The bottles were stacked where they remained on the lees for at least 24 months.
Color : light yellow with greenish reflections and a very fine and persistent perlage.
Perfume : The notes of aromatic herbs emerge clearly, among which licorice and wild fennel stand out. It is enriched by floral and candied citrus scents.
Taste : On the palate it is very balanced with synergy between the acidic backbone, structure and persistence which give it a good complexity.
