TASTING NOTES:

- Nose: this wine for its complex and intense aromas of white fruits, white flowers, bread crust, smoke, fresh hazelnuts and hints of citrus sensation characterized.
- Mouth: entrance on the palate you can notice the oiliness, which gradually evolves dense and tasty flavors. Soft and velvety, with fresh and delicious finish.
PREPARATION: the origin of this wine is born in the vineyards located at 480 meters above sea level, on a hillside soils composed of clay and silt that provide ricura their grapes. Harvest was done manually and then carried to hold to start the maceration process, where the grapes are pressed at low pressure, thereby selecting only the cultivation is guaranteed. It encuba in 225 liter French oak, in these deposits is fermented and breeding with their own lees in suspension.
Owned and operated by the 11th generation of the Chivite family, Bodegas J. Chivite is by far the oldest and certainly one of the most revered producers in the region of Navarra. Colección 125 was introduced to celebrate the 125th anniversary of the winery and the first vintage of the Blanco was in 1993. Produced from a selection of the finest Chardonnay grapes from a single plot known as ‘Las Mercedes’, this barrel-fermented and lees-aged white is wonderfully rich with notes of tropical fruits, white flowers, buttered popcorn and stony minerality.
