Description: Natural fermentation without added yeasts in concrete tanks for about 12 days with temperatures starting from 22 C up to 29 C with subsequent submerged cap maceration for about 40 - 50 days at a temperature of 29 C. Consequently, after racking the it triggers the malolactic fermentation which lasted 15 days with a constant temperature of 22 C. Then the wine goes into 4500 L Slavonian oak and French oak barrels, to refine for 4 years, to finish with 6 months of bottle refinement.
