Description: Zibibbo is both the name of a white grape variety and the sweet wine made from it. The word "zibibbo" derives from the word zabīb, meaning "raisin" or "dried grape." The wine was introduced to Pantelleria, where almost all of the national production is still grown.
Today, Zibibbo is grown using a modern spurred cordon system in Sicily, particularly successfully in the area between Erice and Mazara del Vallo in western Sicily. The vines grow on clayey soils, located 70 meters above sea level.
Zibibbo grapes are harvested in the first ten days of October, where they undergo a natural drying process on the vine. Harvesting and destemming are done manually, followed by cold maceration and temperature-controlled fermentation. When the alcohol content reaches 13.5% vol., fermentation stops naturally, resulting in a residual sugar content of approximately 100 g/l. The wine is then left to age in the bottle for approximately 30 days.
The wine made from Zibibbo is straw yellow, full-bodied with golden reflections, sweet and with a high alcohol content and a characteristic aroma.
