Description: Ruby red colour with the typical hues of Pinot Noir. Intense bouquet, rich with hints of cherry and berries, such as blueberry, raspberry and strawberry. Balanced and elegant taste, soft and refined.
After destemming and a soft crushing, the grapes were transferred to small stainless steel truncated cone tanks, where cold maceration for about 3 days was followed by alcoholic fermentation, which lasted about a week. The latter took place at a controlled temperature of 26 °C and ended in 228 litre containers where the wine completed malolactic fermentation and continued to mature for several months. Pinot Noir della Sala matured for a period in the bottle in the castle's historic cellars before release.
