Age of vines: 60-70 years.
Production: very rich red soils of iron oxides lying on limestone, located in the Salentine Peninsula (Sava and Manduria, in the province of Taranto).
Winemaking: Grape picking in slightly over-ripe; destemming-it is crushing;
maceration at controlled temperature for 10-12 days with periodic rain replacements; racking and malo-lactic fermentation in stainless steel; aging in American oak barrels and French first and second passage for the next 12 months.
Sensory characteristics: ruby red color with garnet highlights much; complex bouquet with ripe red fruit recalls, plum jam, vanilla and cocoa. The palate reveals a robust and velvety body, with a persistent finish by chocolate notes.
Food pairing: traditional dishes from Puglia; meat with tasty condiments, roast meats and mature cheeses.
