Origin: D.O.Ca Rioja, selected vineyards in the Rioja Alta area.
PRODUCTION AND AGEING
The grapes are selected when they are perfectly ripe from the oldest vineyards in the area. The grapes are transported to the winery in small trailers so that they arrive undamaged. The stalks are removed and the grape squeezed, before being macerated during fermentation at a controlled temperature of 28°C, thereby achieving perfect extraction. The next phase, after the alcoholic fermentation, is natural malolactic fermentation. The wine is then transferred to traditional oak casks for an ageing period of 26 months. It is then bottled, and ageing continues for a further 36 months.
ORGANOLEPTIC CHARACTERISTICS
COLOR: Clean and bright. Intense ruby red with good color density.
AROMA AND TASTE: Very perfumed, with aromas of ripe fruit. Complex and elegant. Satin texture with fine tannins and a taste of leather. Elegant and refined, with a long finish and an aftertaste with notes of licorice.
OUR RECOMMENDATION
Ideal for all kinds of meat, particularly game. A very elegant wine which improves stews and casseroles and dishes made with oily fish like salmon and tuna.
